Figs are back and when they are one of Chef Kevin’s favorite salads returns with it. He takes fresh arugula and douses it with his own herbed vinaigrette and hides a few little hidden gems inside of deep fried local goat cheese and then wraps it all up like a cigar in thinly sliced prosciutto and tops it with diced fresh figs and drizzles it with crème de balsamico. The season on fresh figs in our area and on Chef Kevin’s personal trees is short and quantity is limited so this is one of those specials that you will regret not trying if you pass up on it.
